I am in the heavy depths of a love affair .... With butter! If it's any sort of mash, the key ingredient is always butter, vegetables; a once healthy part of your meal now get coated in butter, pastry just so full of butter and then when it's topping a chicken pie with a creamy sauce laced with butter .... Oh yes! So enough is enough, much like when you think it's about time that you don't have a glass (ahem) of wine every night, just stick to the weekends, I think I now have to (even if I can only keep it up a couple of weeks) have a little time off butter ...... for the time being butter is only for the weekend ..... This of course does not include toast, I'm not a heathen ;-)
So tonight, I thought I'd have a chicken and artichoke salad, crammed with baby salad leaves, tomatoes, cucumber, olives and anchovies, I'll pack it with enough flavour I'll never miss the butter..... To get the chicken moist and delicious I thought I'd poach it in chicken stock, there is nothing worse than dry bland grilled chicken. And on my search for the best way to cook chicken I came across a lot of bento boxes and recipes, I think it's time I experimented, so here's to chicken salad and research on bento boxes. I'll divulge my favourite bits of inspiration regarding bento boxes shortly. x
